Large hotel chains talk about sustainability in decades: five-year plans, ten-year targets, committees that report to committees. There's a reason for that: at their scale, change is slow almost by definition.
Independent hotels don't have that excuse. A single owner-operator can decide on Monday to change a supplier, retrofit a system, or rebuild a menu around local producers, and have it done by the season's end.
